As the weather is getting colder and the days are getting shorter, if you’re a foodie like we all are you’ll start getting excited for wintery and autumnal meals. Hearty stews, delicious warming soups, British classics – all the wonderfully filling, comfort food we know and love.

Our convenient ready meals are a perfect foundation for a dish that can be easily added to and developed into an elevated, fully-rounded meal. We have done the hard work for you. 

Below we suggest some simple ideas for quick additions to your Parsley Box ready meals.

Lamb & Chickpea Tagine

A Moroccan-style stew made with succulent pieces of lamb in a fragrant, spiced tomato sauce with chickpeas and apricots.

This dish is already perfectly suited for a comforting evening meal in the wintery weather, however with a few extra additions it can be elevated to a hearty feast, fit for entertaining.

We suggest adding finely sliced warm red pepper to the tagine before topping it with natural or Greek yoghurt, fresh pomegranate seeds, coriander, crumbled feta and chopped pistachios.

Serve with couscous on the side to bulk out the meal and some warm flat bread to mop up the delicious sauces.

Beef Stew

Slow cooked British beef brisket with carrot, potato and swede in a rich beef gravy.

The ultimate winter comfort food, our delicious British beef stew can be easily transformed into a hearty pie dish to rival that of any traditional pub.

Decant the stew into an oven safe dish and top with rolled pastry to create a buttery, flaky pie lid, sealing in the flavours of the hearty stew. Ensure you prick holes in the pastry lid to let steam escape in the oven. The pie lid can also be baked separately and rested atop the bowl of stew.

Serve alongside green veg (tender stem broccoli, garden or sugar snap peas and green beans work well) tossed in crushed garlic and olive oil and accompanied by a potato element of your choice. Our recommendations are mash, boiled new potatoes slathered in butter, crispy roast potatoes or oven chips for that bonus dipping factor.

Chunky Chicken & Grain Soup

A hearty soup made with British chicken thigh, vegetables, brown rice, bulgur wheat and pearl barley.

There truly are few things as comforting as a warm bowl of soup.

One fantastic way to elevate the humble soup is to add in some kale chips. Kale is easy to grow in your own garden or can be purchased at the supermarket for little expense.

Simply strip kale leaves from the stalks and midribs. Wash, dry and tear the leaves into slightly larger than chip-sized pieces.

Toss these in a large bowl with extra-virgin olive oil and salt. Massage the leaves to coat evenly. Spread onto baking trays in single layers and bake for 20 minutes at 160⁰C.

Allow to cool before adding through and atop your steaming bowl of soup. Finish with cracked black pepper and chili flakes for an extra kick and serve with a soft bread roll, warmed in the oven and slathered with melting butter.
