Bacon Wrapped Meatloaf
Our in-house chef shows you how to make a hearty and robust Bacon Wrapped Meatloaf using the Beef Steak Mince and Back Bacon from Parsley Box’s Butcher’s Best Box.

Pre heat oven at 180 degrees fan.
Warm a small pan on low heat and add the oil.
Finely chop half an onion.
Add the chopped onion and cook without colour for 10 minutes.
Remove from the heat and cool.
Place mince in a bowl.
Add fresh herbs, breadcrumbs, cooled onion, mixed herbs and seasoning.
Slice bacon into three strips and lay on cling film.
Shape mixture into small loaf and place on bacon.
Wrap meatloaf evenly with bacon strips.
Fold excess cling film over and firmly press flat.
Refrigerate until required.
Place meatloaf on a lightly oiled roasting tray.
Bake in oven for 30/40 minutes – until cooked through.
Serve with Parsley Box Red Wine Gravy, Onion Mash and side vegetables.
